These mini Puddings are a great party dessert or sweet snack to have with coffee.
Ingredients: 500 grams of Christmas Pudding
40 gm Copha, melted
3 tbsp berry jam
foil patty cases
1 egg white
3 drops lemon juice
1.5 cups icing sugar
1 red jelly snake
1 green jelly snake
Method:
Crumb the Christmas Pudding into pieces and put into food processor or blender. Add melted Copha and berry jam and thoroughly blend.
Form small ball of mixture about the size of a large grape and place into patty pan. Place into refrigerator until firm.
The icing is made by beating the egg white with the lemon juice until frothy. Add the icing sugar, a little at a time until the mixture runs off the spoon and can be poured. Pour a small amount over each small pudding. Cut red and green snakes into small pieces and add to top of pudding for decoration.
